It seems as if we eat alot of chicken here at the farmhouse. Tonight was no exception. I made Chicken Marsala, which the kids just love!
So easy to make too!
3 lbs chicken tenderloins cubed
2 Tbs butter
2 Tbs olive oil
2 cloves garlic minced
1 large shallot chopped
1/2 cup Marsala wine
3/4 cup chicken stock
Pepper to taste
In large saucepan, melt the butter and add the olive oil. Add the cubed tenderloins and cook til done. Remove chicken and set aside. Add shallot and garlic. Saute til done, about 30 seconds. Add wine and reduce to half. Add chicken stock and reduce to half. Add chicken back and heat through.
I served it over jasmine rice. Yummo! If you would like you can add mushrooms to this also. My kids are not fond of the fungi though. In fact, they freak out if they see them in their food. If you want to add mushrooms, do so after sauteeing the garlic and shallots. Cook them til tender.
Speaking of kids....
....we spent some time out in the yard tonight. She is getting so big! I can hardly believe that my "baby" will be a sophomore next year and driving this summer! Yes, you better stay off the roads and sidewalks!
My handsome guy, who was playing football with dad in the yard. He even has a girlfriend this year. I wonder if she knows I am his first love though?!
After a little walk around to see all the flowers starting to bloom, I did realize something.
I need to mow the yard this weekend.

YOur two oldest.... getting way too big... but precious! How do they grow up so fast. You must not let bitty one get big!!!

I have to make that chicken ~ maybe next week! We are right there with you ~ lots of outdoor work to do and since the sun finally came out from undercover this week ~ we are hoping it will stick around for the next 3 days or so. xo
The Chicken Marsala looks wonderful; I'd love it with or without mushrooms.
