Captain's Toast

By popular demand (ok so only Lori was interested) here is the recipe for Captain's Toast. I make this for sleepovers and late night snacks for us old foggies too. Everyone loves it. My kid's friends when they are coming over to sleepover ask if I am going to do this for breakfast.

Captain's Toast Recipe

Makes 6 slices of toast

2 eggs
1/4 cup heavy cream
1/2 tsp sugar
1/2 tsp vanilla
1-1/2 cup Captain Crunch cereal
6 slices of Texas toast bread

In flat dish add all ingredients except for cereal and bread. Beat well. In another flat dish pour in the cereal. With a drinking glass crush the cereal. You want a fine crumb, no big pieces. Dip the texas toast in the egg wash and then press both sides in the cereal crumbs. Brown both sides in a skillet lightly pressing once. When both sides are lightly brown, serve.

So there it is my secret weapon for kids wanting to come over and stay at our house.
