Muffins Fit For State!

So what do you do when you are going away for the weekend, need some snacky type of food and something for a quick breakfast?! You run to Butter Yum's blog and search through all her yummy recipes. She posted these muffins a week ago. They looked so good and of course so easy I just had to try them.

Unfortunately, they didn't survive 12 hours. Lots of happy faces and tummies though.

So....

I just had to change them up a bit cause I can't leave well enough alone!

Chocolate Chip Pumpkin Spice Muffins

1 Spice cake mix
1 can Pumpkin puree
1/2 - 3/4 cup water
1/2 bag mini chocolate chips

Preheat oven to 400 degrees. In medium mixing bowl, combine cake mix and pumpkin. I found that when I used a name brand pumpkin it was a bit drier and I used 3/4 cup of water. This time using a store brand, I used 1/2 cup of water. Add water 1/4 cup at a time, mix will be on the stiff side. Add chocolate chips.



Add liners to muffin pan. Evenly distribute mix into 12 liners.


Bake in 400 degree oven for 20 minutes. Let cool, if you can.


These muffins just can't be described. Smooth and creamy is what they are!

So now for 7 things you may not know about me.

Hmmm....

1. I am a total clutz! If there is a way to hurt myself, I will find it! Just today, I was playing in the yard with the kids. We were throwing these fluffy chunks of snow in the air and the dog was jumping for them. You had to hold them gently cause they would just disintegrate in your hands. I took one and told my son "Watch my incredible strength!" I smacked the top of my head with the snow clump. I do believe that I grabbed the only one that had a brick in the middle of it! Holy crap that hurt! I am hoping that the lump on my forehead turns purple so I can really feel stupid.

2. I love gadgets!

3. I like pumping gas cause I really like the smell of it.

4. I have realized that the fatter I get, the more I love to cook!

5. I hate peas!

6. I love scary movies but hate zombie and gory movies. If they are going to eat somebody in it, forget it!

7. Sometimes I take my shoes off without untying them even though I yell at my kids for doing that.

So there ya go! A few disturbing facts about me that you probably could of lived without knowing.

I Hope You Are Not tired Of Chocolate!

I mean, who would ever be tired of chocolate?! Is it really possible?

I made this dessert for my aunt's wake and it was such a hit, I made another one this week! It's called "Better Than Sex" cake but at the wake I called it a French Silk pie.

Better Than Sex Cake

1-8 oz package cream cheese room temperature
1 cup confectioner's sugar
16 oz cool whip topping
3 small packages instant chocolate pudding
4 1/2 cups milk
1 package of oreos (I used GS Thin Mints this time)
Butter ( 1 cup if using oreos, 1 stick if using Thin Mints)

In food processor, pulse cookies and butter together until clumpy


Press into bottom of 9" springform pan.


With an electric mixer, cream cream cheese and sugar together.


Fold in 1/2 the cool whip. Add to springform pan with crust and spread evenly.


In medium bowl, whisk pudding mix and milk together.


When mixed, add to springform pan and spread evenly. Top with remaining cool whip and refrigerate atleast 3 hours to firm up.

Before serving, melt 1/2 cup of chocolate chips in microwave and drizzle over top of cake. Garnish if desired and serve.

To Tanya - There is no name on the back of the plates. The very nice lady at Marshall's told me that you could request at your local Marshall's those plates. She said they are so popular and in demand that they have brought them back! Very few stores have them on sale but every store should have the new arrivals.

How To Make A Birthday Cake When You Are Too Lazy To Go To The Store

Today is this guy's birthday.


Happy 71st Birthday Dad!

Saturday we went to celebrate it with him. Of course, the night before at 8 pm I decided to make him a cake. Yes, I do like to plan ahead for these things. It had to be something yummy, chocolatey, he likes nuts so nutty and he lives for candy so throw in some candy too while you are at it. The perfect cake for him? Giada deLaurentiis' Hazelnut Crunch Cake with Mascarpone and Chocolate.

Since I didn't have everything to make it, I tweaked it a bit. Her original recipe is posted, but the changes I made are in parenthesis.

Cake
1 box chocolate cake mix and everything you need to make it.

I didn't have a chocolate cake mix, so I made this one from scratch.

Devil's Food Cake

4 oz unsweetened chocolate
1/2 cup of milk
1 cup packed brown sugar
1 egg yolk
2 cups cake flour (I used all purpose)
1 t baking soda
1/2 t salt
1/2 cup butter
1 cup sifted sugar
2 egg yolks
1/4 cup water
1/2 cup milk
1 t vanilla
2 egg whites

Preheat oven to 350 degrees. Melt chocolate in a double boiler. Add milk, brown sugar and 1 egg yolk. When thickened remove from heat. You want a custard like mixture.

Sift flour. Resift with baking soda and salt. Beat butter til soft. Add sugar. Beat til creamy. Add remaining egg yolks one at a time. In a bowl mix milk, water and vanilla. Add flour mixture in three parts to butter mix, alternating with milk mixture. Stir til smooth. Add chocolate mixture and stir.

Beat whites til they form soft peaks. Fold into cake batter. Grease and flour two 9" cake pans. Add cake mix equally to pans. Bake in oven about 25 minutes til done. Let cool completely.


Now back to Giada's recipe.

Crunch

1 cup hazelnuts (I used cashews)
2/3 cup sugar
1/3 cup water

Spread nuts out on parchment paper. In small saucepan combine sugar and water. Stir til sugar is dissolved. Bring to a boil. Continue to boil until mixture is light brown. Remove from heat and let bubbles subside. Pour mixture over nuts. Let crunch completely cool. When cool, break up saving a few large pieces for decorations. In a food processor, pulse remaining crunch into small bits. Set aside.

Filling

2-8 oz containers mascarpone cheese, room temp. (I used cream cheese)
1 cup heavy cream
3/4 cup confectioner's sugar
1 t vanilla

Add all ingredients in mixing bowl. Whip til it forms soft peaks. Fold in chopped crunch.

Topping

1/4 cup chocolate chips
1 T sugar
1 t grated orange zest.

In food processor add all ingredients. Pulse til a fine crumble.

To assemble cake, Add filling to top of one cake. Place other cake on top and ice with remaining mixture. When completely covered, sprinkle with toppings on top and sides. Add large pieces to top of cake.


This cake is a definite must try. I have made it exactly according to Giada's and both ways are good.

Play Date and Cornbread with Asiago Cheese Bagels!

Today was a play date for the bitty one and her two BFFs.


She met these two little cuties in preschool and now the twins are all she talks about! Their mom is just a wonderful person too. I enjoy spending time with her so much. Since their parents are getting ready to leave for Thailand on Sunday, I took the girls for the day.

They are just so freaking cute!

Anyways.... while they played, I played in the kitchen.


Cornbread and Asiago Cheese Bagels!

My kids love these and they tend to go quickly around here. I promised Yvonne @ Stone Gable this recipe many moons ago, so without further ado, here it is!

1 cup scalded milk
1/4 cup unsalted butter
1 Tablespoon sugar
1 teaspoon salt
1 pkg or 3 teaspoons yeast
1 egg
3 cups flour
3/4 cup cornmeal

In a small saucepan, add 1 cup of milk and scald. Add butter, sugar and salt and stir. Bring milk mixture up to 100 - 115 degrees.


Add yeast. Let stand for 5 minutes. Meanwhile, add flour and egg to a bowl. Add milk mixture and mix well. Knead 10 minutes until dough is firm.


Heat oven to 350 degrees. Oil a large bowl and turn dough into bowl. Cover with a wet towel. When oven is heated, turn off and place dough inside. Keep in warm oven til dough is double in size.


Punch down dough and turn onto a floured board. Cut dough into 18 pieces. Roll each piece about 7" long, wet ends and pinch together to form a circle.


Cover rings with a damp towel and let rise 15 minutes.


Bring 4 quarts of water to almost a boil with 2 Tablespoons sugar. Drop small batches into hot water. When rings surface, flip over and cook 3 more minutes.


Remove from water. Preheat oven to 400 degrees. Lightly beat 1 egg white. Brush rings with egg white. Sprinkle with Asiago cheese.


Bake in oven for 20-25 minutes or until golden brown.

Ultimate Bagel Spread

1 brick of cream cheese, room temp
1/4 cup parmesan cheese, micro grated
1/4 cup romano cheese, micro grated
1/2 tsp minced garlic
1/2 tsp garlic powder
1 tsp onion powder
1 tsp heavy cream

Blend all ingredients in a small bowl. If desired, form into a ball. Cover and refrigerate.


Slather warm bagels with cream cheese spread and....


....Enjoy!

The Tale of the 85 Pound Lasagna

Yup, this is going to be a veeery long one gals. So if you would like to learn how to go totally psycho and spend 14 hours making dinner then bunker down!

Warning! There are lots of food pics. I don't think they are drool worthy though.

You see it started out innocently enough. I wanted lasagna. I was craving lasagna. Lasagna is usually no small undertaking either. Well, I managed to turn it from a molehill to a mountain. I admit it, I suck at making bread. I just can't get it to rise right. So lately I have been wanting to make more bread to perfect it.

Ciabatta bread goes great with lasagna

BTW - you have to pronounce the "g" in lasagna in our house. When my son was younger he didn't understand why you didn't. He still does this to this day.

Anyway.....

Ciabatta bread. First you have to make a sponge. I don't know what the purpose of the sponge is or what it does. The recipe just says you have to, so I do.

1/8 t (teaspoon) of yeast
2 T (tablespoons) of warm water
1/3 c (cup) of room temp water
1 c flour

In a mason jar, mix the yeast and warm water. Let stand for 5 minutes.


Ah, I still LOVE my painted countertops!

Anyways.... add the remaining water and flour. Cover the lid with saran wrap and put just the ring tightly on. Shake for 4 minutes. (Tip - 4 minutes is about where you believe you can shake this no more after switching back and forth between arms) Let stand for 2 hours.

Ciabatta bread
1/2t yeast
2T warm milk
2/3 c room temp water
1T olive oil
2c flour
1/2t salt

Mix yeast and milk. Let stand for 5 mins. Mix milk mixture, sponge, water, oil and flour on low with a dough hook til flour is moist. Beat on medium for 3 mins. Add salt and beat an additional 4 mins.

Oil up a large bowl and put dough in it. Cover with plastic wrap and let stand til doubled.


I left it overnight.

Lay out 2 pieces of parchment paper on 2 cookie sheets. Dust paper with flour. Gently remove dough from bowl and set on a floured surface, not your paper. Divide dough in half. Set each half on the paper and shape into an oval. Dust top with flour. Lay a damp towel over the two halfs and let stand til doubled again.

Note - I decided that next time I make this I am not going to divide in half. Just do as one loaf.

Should double in about 2 hours. I let mine sit til an hour before dinner so the bread would be warm for dinner. I kept redamping the towel though when it got dry.

Heat a pizza stone in a 450 degree oven for 45 minutes. Bake one loaf at a time. Set each loaf on stone and bake for 20 minutes.

It's a very rustic bread.

Note - if you forgot to thaw out some butter for dinner and set it on the cooktop to thaw put a dish under it. If it melts all over it makes a HUGE mess. Not that I did that, I'm just saying...

Now for the lasagna. I use Giada DeLaurentiis' recipe. I love Giada! I don't look as happy or dress as pretty when I cook as she does though.

First you need to make a Marinara Sauce

1/2 cup olive oil
2 small onions finely chopped
2 garlic cloves finely chopped
2 celery stalks finely chopped
2 carrots finely chopped
1 lb bella mushrooms sliced and washed
1 large roasted red pepper sliced
1/2t salt (I use kosher salt)
1/2t freshly ground pepper
2 lbs Roma tomatoes (or 2 large cans of diced tomatoes)
2 dried bay leaves
1T oregano (I used Mexican oregano)

Or you could make this easier and just use your favorite jarred spaghetti sauce. About 2 jars.

If you are using the canned tomatoes you can skip this step. Wash your tomatoes and put whole in a pot of boiling water. You want the skins to split so you can peel the skin off.



Peel the tomatoes and put in a food processor. Pulse to just rough chop. You want to see chunks of tomatoes.



In a large stock pot, heat the oil. Add the garlic and onion and cook til translucent, about 10 minutes. Add the celery, carrots, mushrooms, red pepper, salt and pepper. Cook til veggies are soft, about 10 minutes.

Giada's recipe doesn't use the mushrooms and red pepper. That is something that I added since I love both in a marinara sauce.

Add the tomatoes, bay leaf and oregano. Simmer til the sauce is thick.

Giada doesn't use the oregano either. I added that too. I like the Mexican oregano over the Italian since it is sweeter.



Set aside in a bowl when done.

Caution, there will be LOTS of dishwashing when you are done!

Noodles

You can use a box of lasagna noodles if you like. I have a pasta maker. In fact I have 2. One for food and one for clay. I have never used either til now. I now know why. I just love gadgets though! If you are using box noodles you can also skip this step.

3 cups flour
4 large eggs slightly beaten
1T kosher salt
1 T olive oil

In a small bowl, beat eggs with salt and oil. Put flour in a food processor. Add the egg mix to the flour and pulse to combine. Scrape bowl down. Turn on processor and blend til dough sticks together. Put dough on a floured surface and knead til dough is smooth. Form into a ball and wrap in plastic wrap. Let sit 30 mins.



My pasta maker has 3 sets of rollers. One is a smooth roller and the two others are cutter rollers. My largest setting is also "9". Some pasta makers are different, but you want to put yours on the largest setting.



On mine you just move the handle to whichever roller you want to use.

Now you want to flatten out your dough into a rectangle about 1/2" thick. Don't make it wider than your pasta maker. It also helps for the first roll to flatten the end going in first smaller than the 1/2".

Does that make sense?

Now, on the largest setting, roll your dough through. Don't pull on the dough at any time. Don't worry if your first roll through isn't that pretty. It works out eventually. Going through each number til the lowest setting roll your dough through. I did fold mine up in long sheets. It does get longer each time through. Don't skip a number either, that will gum up your machine.


Don't worry about those little folds either. The last two settings does smooth everything out. If your edges are funky like mine it doesn't matter either as you will overlap the noodles. Wrap the noodles in plastic wrap and set aside.

Tired yet?! We got lots more to do.....

Now to make a Bechamel Sauce. Basically a white sauce.

5 T unsalted butter
1/2 c flour
4 c milk
1/2t white pepper
1/2t nutmeg

Melt butter in a sauce pan. Add flour and whisk til smooth on medium heat, about 2 mins. Slowly add milk while whisking. Keep on whisking til sauce is thick, about 10 mins. You definitely will develop your whisking skills with this recipe! Plus give your arms a work out. Once thickened, remove from heat and add pepper and nutmeg. Set aside.

Just a few more parts that we need to make..... we are getting there!

If you want meat in your lasagna, now is the time to cook it. You can either brown 1 lb of hamburger or I browned 1/2 lb hamburger and 1/2 lb of italian sausage. I did remove the sausage from the casing.

You also need spinach for this. You can use 2 packages of frozen, if so thaw and squish out the water. Or, 2 cans of canned spinach, just squish out the liquid. Or do like the psycho me did and use fresh. Just bring some water to a boil, add 2 bags of fresh spinach. Remove from heat and stir til spinach gets limp. Drain and set aside.

Now for a ricotta cheese mixture.

1-1/2 lb ricotta cheese
3 large eggs
1/2 t white pepper
1/2 t kosher salt

In medium bowl mix ricotta cheese and eggs. Add salt and pepper. Set aside.

Now, to put it all together!

If you are using box noodles, you want to bring a pot of salted water to a boil. Add a bit of olive oil to the water to keep the noodles from sticking. Add your noodles and cook til the noodles are still firm but limp. Lay the noodles out flat on plastic wrap. You can layer the noodles, just use plastic wrap inbetween the layers.

Take a 9 x 13 baking dish and butter the bottom and sides. Add your marinara sauce and bechamel sauce together. Spoon 1/3 of this mix on the bottom of the pan and spread out. Add a layer of noodles overlapping the edges slightly. You want to cover the sauce completely. Spread all the ricotta mixture over the noodles. Spread all the spinach over the ricotta cheese layer. Top with another layer of noodles. You know the drill about the noodles....


And you thought I forgot to take pics!

Spread meat mixture over the noodles. Top with another third of the sauce. Then noodles again. Spread remaining sauce over the noodles. Spread 5 cups of shredded mozzarella cheese over the sauce. My big dumb idea was to use fresh mozzarella cheese that I shredded myself. I was regretting that about now. You can use preshredded cheese though. Sprinkle with 1/2 c fresh grated parmesan cheese. Now after all that mixing, whisking, choppind, slicing and cranking this lasagna does feel like it weighs 85 pounds.



Bake at 375 for 45 minutes. Let cool about 15 minutes and serve.



Wow! That is really sad. I need to take some tablescaping lessons from Yvonne!

What? You too want dessert? Fine....

My fantabulous Carrot Cake!



Actually, I got this from the Joy of Cooking, my fav recipe book.

1 c flour
1t baking soda
1t baking powder
1 t cinnamon
1 t salt
1/2 c oil
1 c sugar
2 eggs, beaten
1-1/2 c shredded carrots
1/2 c chopped nuts (I use cashews)

Sift flour and then measure out one cup. Resift with baking soda, powder, cinnamon and salt. In a small bowl mix together eggs, sugar and oil. Add egg mix to flour mix and blend. Fold in carrots and nuts. Grease and flour an 8" springform pan. Add cake mix to pan and bake at 325 for 1 hour and 25 minutes.

This makes one layer. I have tried doubling this recipe and putting in two pans. For some reason this does not turn out the same. I mix each layer and bake together. For this one, I got lazy and just made one layer and cut it in half.

Cream Cheese Frosting

2 bricks of cream cheese room temp
1/2 c milk
1/2 t vanilla
2 c confectioners sugar

In mixer cream together cheese, milk and vanilla. Slowly add confectioners sugar. That's all!

Now go and enjoy dinner!

A Late New Year!

I hope that everyone had a wonderful New Year! I'm not sure if I have fully recovered yet.

The kids sledded across the street while I got to cleaning and cooking and decorating.



Someone was not happy about being left out though!



When I asked what kind of cake the bitty girl would like she told me she wanted "59 little princess cakes all in a circle holding hands!" I am not sure what the significance is of 59. She "settled" for one big princess and 4 little princess all different colors.



Aren't they cute? I would love to take credit for them, but my very talented sister did them. She has much more patience than me and I still have not gotten over the whole princess castle cake with 583 individual daises I did for the 1st birthday.



We had to dress like a princess too. I've really gotten my moneys worth out of this Halloween costume. I think it will be a very sad day in the DeLauder household when we have to bid adieu to this.



It's so hard to not touch.



Then came the big people party. The dog seems to think that she is a lap dog. Too much food, too much drink and too much fun means 3 days later I am finally upright.

~ For Yvonne

Yvonne posted the other day that she was challenging herself to use all the meat in her freezer. She also said that she had alot of venison. I pulled out one of my favorite wild game recipes for her to try. It is simply delicious! You can also use a boneless small sized steak in place of the venison.



First you need to make a Bordelaise sauce

1/4 cup olive oil
1/2 cup chopped yellow onion
1/4 cup chopped carrots
1/4 cup chopped celery
1 tsp minced garlic
1-1/2 lb mixed mushrooms ( I used all bella mushrooms)
1/2 tsp salt
1/2 tsp pepper
1/2 cup chopped tomatoes
1 cup red wine (I used Marsala)
1 qt beef stock

Heat the oil in a large pot over med-high heat. Add the onions, carrots and celery.


Cook til soft about 3 mins. Add the garlic and cook about 30 secs until aromatic. Add the mushrooms and cook til they start to give off their juices about 4 mins. Add the salt and pepper. Add the tomatoes and cook for 1 min.


Add the wine stirring to loosen any bits on the bottom of the pan. Cook til reduced by half. Add the beef stock and bring to a boil. Once boiling, reduce heat to simmer and cook til reduced by half about 1-1/2 hours.

While the bordelaise sauce is simmering mix up a creole seasoning.



2-1/2 Tbs paprika
2 Tbs salt
2 Tbs garlic powder
1 Tbs black pepper
1 Tbs onion powder
1 Tbs cayenne pepper (adjust if you don't care for spicy hot food)
1 Tbs oregano
1 Tbs thyme

Combine in small bowl and set aside.

I have found from cooking venison that if you get a tough animal you can marinate it overnight or longer in the fridge with milk. The acids in the milk tenderize the meat. Same goes for beef. For white meats use coca cola. Tonight I was using stag tenderloins and he is a tough old bugger. I cut 1/2 inch or more slices and marinated it 2 days in milk in the fridge. Once it was done marinating, I pounded the crap out of it to make it about 1/4 inch thick.



I used the little pokey thingy ( I think it is called a jardineere?) for this. Then I coated the pieces with my creole seasoning that I mixed up and dredged them in flour. I heated about 1/4 cup of olive oil in a pan and browned them on both sides. Doesn't take long and you don't want to overcook it. Once it was done I served it with mashed potatoes and poured the bordelaise sauce over everything. I also did glazed carrots too.

The nicest thing about cooking dinner?


Having someone wash the dishes for you!

Sorry but it has been really crazy around here. I got my husband's birthday right before Christmas, then Christmas dinner for 10 and Syrina turns 3 on New Year's Eve! So that means another party!
